MEAT BALLS
INGREDIENTS
1 lb round steak, ground
2 ozs salt pork or bacon
2 tbsps. onion, minced
1/2 tsp. salt
a pinch recardo or paprika
1-2 tbsps. cooking fat
1 tbsp. tomato paste
1 tbsp. flour
pepper and thyme to taste
METHOD:
1. Mix the ground meat with the oninons and seasonings.
2. With wet hands shape into balls.
3. Heat the fat and fry the balls, turning carefully to brown all over.
4. Add hot water to almost cover the balls, then stir in tomato paste, and allow to simmer for 15 - 20 mins.
5. Stir the flour to a paste with cold water, add and boil for five mins. to thicken the gravy.
6. Serve it with gravy.
(This dish is often served with Rice and Beans)
